Mushroom Soup - Eric Anwiler

1.5 lb crimini mushrooms roughly chopped
1 Spanish onion roughly chopped
4 cloves garlic minced
1 qt chicken stock
6 oz heavy whipping cream
Salt and pepper
2tbs Evoo
2tbs butter

Sauté onions over med high heat for 5 min in butter and oil. Add garlic and mushrooms; sauté for 5 min. Add chicken stock and simmer for 20-30 min. Blend. Add cream. Salt and pepper to taste.
Serve with crostini.
