Quesadilla Casserole- Eric Anwiler

Ingredients:
1.5 lb ground beef
1/2 white onion- chopped

1 8 oz can tomato sauce
1 15 oz can Rotel
1 15 oz can black beans, drained and rinsed
1 8.75 oz can whole kernel corn, undrained
1 4.5 oz can chopped green chiles, undrained
2 tsp chili powder
1 tsp ground cumin
1 tsp minced garlic
1/2 tsp oregano
1/2 tsp crushed red peppers

4-6 flour tortillas (8 in)- we like Trader Joes Jabanero Lime
2 c shredded cheddar

Directions:
Preheat oven to 350.
Brown beef and onion in a large skillet over medium high heat; drain. Add tomato sauce, Rotel, beans, corn and green chiles; mix well. Stir in spices (except red pepper). Bring to a boil, then reduce heat to low and simmer 5 minutes. Add red pepper to taste.

Spread 1/2 c beef mixture on the bottom of a 13x9 greased baking dish. Top with tortillas, overlapping as needed. Layer with 1/2 the remaining beef mixture and 1/2 the cheese. Repeat with remaining tortillas, beef mixture and cheese.

Bake in 350 oven for 15-20 min or until heated through. Let stand 5 minutes before serving.
