2 cups whipping cream
1 5oz pkg Boursin cheese
3 lbs red new potatoes (unpeeled, thinly sliced)
Preheat oven to 400. Butter a 9x13 baking dish. Stir cream and cheese in a pan over medium high heat until smooth. Layer 1/2 of potatoes, generously season with salt and pepper and 1/2 of cream mixture. Repeat and bake for 1 hour.
