Twice Baked Potatoes - Amy Clutter

4 large baking potatoes
1 stick butter
1/3 c chive dip
Salt and pepper
1/2 c shredded cheddar cheese


Preheat oven to 400. Pierce potatoes and bake until fork pokes through easily. Remove from oven and cut small oval on top. Scoop out insides and place in a bowl. Add other ingredients. Mix together well and refill potato shells. Top with additional cheese, bacon or other toppings. Put back in oven to melt cheese or keep warm until serving.
