Cilantro dressing:
1 1/3 cups sour cream
3/4 cups real mayo
1 bunch of cilantro
1 package ranch dressing mix
4 tbs. salsa verde
2 cloves garlic
1/8 tsp. tabasco sauce
juice of one lime
Mix together in a blender. Refrigerate overnight or for at least 2 hours.
Sweet Pork:
3-4 lbs. pork roast or boneless pork chops
1 cup brown sugar
2 cans coke (not diet)
One 7 oz. can of chipotle chilies in adobo sauce
1 heaping tsp. dry ground mustard
1 heaping tsp. cumin
1 tsp. minced garlic
1/3 cup ketchup
Remove chilies from can of adobo sauce- just use the sauce. Pace all ingredients into blender (except pork). Rinse can of adobo sauce out with coke to get it all out. Blend until well mixed.
Place pork in crockpot and pour sauce over it. Cook on low 6-8 hours.
Shred pork and cook one more hour.
