Roast Lamb - Eric Anwiler

Lamb chops
Salt and pepper
1 large onion
1 rib chopped celery
1 large carrot
3-4 cloves crushed garlic
2 sprigs thyme
1 1/2 c beef stock

Salt and pepper both sides of the lamb. Cut onion and put on the bottom of the crock pot. Place lamb on top with celery, carrot, garlic, thyme beef stock. Cook on low for 6-7 hours.
