3-4 small pork loins (or 2 large)
2 tbs butter
2 tbs garlic
Salt and pepper
1 lg can tomato soup
Water
Shredded cheddar cheese
Slice fat from pork and cut into bite sized pieces. Place in skillet with butter, garlic, salt and pepper. Cook until meat is no longer pink. Add soup and small amount of water. Cook until heated through, reducing sauce to thicken slightly. Serve over mashed potatoes and top with cheddar cheese.
Mashed Potatoes:
3-4 baking potatoes
1/2 stick butter or margarine
Milk
Salt and pepper
Peel and slice potatoes and place in a large pot of water, adding salt. Bring to a boil, then reduce heat and cook for 30 minutes or until soft. Drain and place in a bowl with butter. Beat together, adding milk until potatoes reach desired consistency. Add additional salt and pepper to taste.
