1 lb (12 slices) sharp cheddar cheese
1 lb (12 slices) monterey jack cheese
1 doz large flour tortillas
large can diced tomatoes
Salsa or green chilis and chopped onions or Rotel diced tomatoes and green chiles
1 green pepper, sliced into rings
Preheat oven to 375 and grease a 9x13in pan. Prepare by stacking one slice of each kind of cheese near the edge of a tortilla and top with a rounded tablespoon of salsa or other filling. Roll up tortilla around cheese, folding ends to form 12 little packages and place quesadillas in casserole. Top with tomatoes and juice. Bake for 25-30 minutes or until cheese is melted.
