1 c softened butter or margarine
1/2 c sugar
2 tsp almond extract
drops green food coloring
2 1/2 c sifted all purpose flour (sift before measuring)

Beat butter, sugar, almond extract and food coloring at medium speed until light and fluffy. Stir in flour with wooden spoon until smooth. Divide dough into 2 parts and refrigerate, wrapped in wax paper, for 2 hours. Preheat oven to 300. On lightly sugared surface, roll out dough one part at a time, about 1/2 in thick. Cut out cookies and bake 1 inch apart on ungreased cookie sheet. Bake 25-30 minutes or until light golden around edges. While still warm, roll in sugar. Cool completely on wire rack.
Makes 3 1/2 dozen.
